Roast Turkey
Thoroughly clean cavity of turkey. Stuff with your choice of dressing. Grease outside of turkey with butter or margarine. Place in roasting pan, breast side down - this allows juices to flow into dressing and breast. Roast at 350 degrees until done. If using meat thermometer, insert into thigh of turkey and roast to temperature of 190 degrees. If you are roasting without thermometer press fleshy part of drumstick. It is done if meat feels very soft. Also move drumstick up and down. If it gives readily or breaks, it is done. Allow 1/2 pound per person in choosing the right size turkey for your dinner.


HONEY GLAZED TURKEY
8 servings

STUFFING:
5 c. soft bread crumbs
1 c. finely chopped green pepper
1/2 c. finely chopped onion
3/4 c. chicken broth
1 tsp. dried sage leaves
1/2 tsp. dried thyme leaves
1/2 tsp. salt
Dash black pepper
1 tbsp. grated orange peel
3 tbsp. orange juice
1 tbsp. honey

GLAZE:
2 tbsp. melted butter or margarine
2 tbsp. orange juice
2 tbsp. honey

Rinse turkey inside and out. Pat dry. Reserve giblets and neck for broth. Make filling: Mix bread crumbs, green pepper, onion, chicken broth and spices. Add orange peel and orange juice. Spoon stuffing into cavity of turkey. Close opening with skewers. Place turkey, breast side up, on a rack in a shallow pan. Insert meat thermometer in thickest part of thigh. Roast turkey, uncovered, at 325 degrees F for about 1 hour. For glaze combine butter, orange juice and honey. Brush turkey, several times with glaze and pan drippings and roast it for another 1 1/2 to 2 hours until thermometer registers 180 degrees F. Remove turkey, keep warm. Slice and serve.


TURKEY VEGETABLE SOUP
1 meaty turkey casserole
2 c. carrots, thinly sliced
2 c. onions, coarsely chopped
2 c. cabbage, chopped
2 c. cauliflower (flowerettes)
1 c. celery, thinly sliced
1 tbsp. salt
1 tsp. pepper
2 c. pasta (shells, noodles)
1 lg. or 2 sm. bay leaves

Place meat casserole (break in half if need to fit in pan), bay leaf and approximately 1 cup water in pressure cooker. Cook at full wobble 15 minutes. Let cool naturally. When pressure is relieved debone carcass. Discard all but the broth and meat. Add water to fill pan half full (see hint). Add vegetables, salt and pepper and stir. Bring to full pressure once more and cook 10 minutes. De-pressurize pan by running cool water over lid in sink. Open, check vegetables for tenderness. Season to taste. IF desired, cook 2 cups pasta in separate pan until tender. Rinse well to remove excess starch and add to soup when vegetables are tender. (Soup may be done by boiling in large pot if pressure cooker is not available - it just takes longer!)

HINT: To remove excess fat, put broth in refrigerator overnight before vegetables are added. Skim solidified fat off top of broth before continuing.


TURKEY DRESSING
3 pkgs. ready to make cornbread
1/2 loaf white bread
6 eggs
1 1/2 c. onions, chopped
Salt to taste
1-1/2 c. chopped celery
8 c. chicken or turkey broth
3 heaping tsp. sage
2 tsp. black pepper

Follow the directions on the ready to make cornbread packages. Crumble cornbread into bowl with 1/2 loaf of white bread. Add 6 eggs. Saute onions and celery in butter and add to bread mixture. Put in 8 cups of broth, the sage, the pepper and salt to taste. Cook in covered greased casserole dish for approximately 35 to 45 minutes. Serves 20.


TURKEY PIE
2 c. cubed cooked turkey or chicken
1 tbsp. flour
1 c. sliced carrots
1 c. chopped onion
1/4 c. sliced celery
1/2 tsp. thyme
1/8 tsp. pepper
1/4 c. butter or margarine
1 can cream of mushroom soup (or)
cream of chicken soup
1 c. cooked green beans
Pastry for 2 crust pie
Milk

Toss turkey-chicken with flour. In saucepan cook, carrots, onion and celery with thyme and pepper in butter until tender. Stir in soup, meat mixture and green beans. Pour into 9 inch pastry. Roll out remaining pastry. Cut into 1/2 inch strips. Criss cross strips over filling to form lattice top. Brush pastry with milk. Bake at 350 degrees for 45 minutes or until crust is lightly browned.
