3 beaten eggs
1 1/2 c. sugar
1/2 c. butter or margarine, melted
4 tsp. lemon juice
1 tsp. Vanilla
1 (3 1/2 oz.) can (1 1/3 c.) flaked coconut
1 unbaked 9 inch pastry shell
Combine eggs, juice, butter
or margarine, lemon juice and vanilla. Stir in coconut. Pour
filling into shell (unbaked pastry shell). Bake in moderate oven
350 degrees for 40 to 45 minutes but no more. Cool well before
serving.
