2 c. pumpkin
1 c. brown sugar
2 tsp. pumpkin pie spice
3/4 tsp. Salt
3 eggs, separated
3/4 c. evaporated milk or half & half
Mix pumpkin, brown sugar,
spice, salt, egg yolks and milk. In separate bowl, bet egg
whites and fold into pumpkin mixture. Pour into pie shells. Bake
at 400 degrees for 10 minutes. Reduce heat to 350 degrees and
bake until knife comes out clean.
