CHICKEN SALAD

1 lg. chicken, cooked, deboned and mashed
2 tbsp. poultry seasoning
6-8 eggs, hard boiled and diced
2 to 2-1/2 c. salad dressing or mayonnaise if desired
2 red apples, cored and diced but not peeled
2 green apples, cored and diced but not peeled
2 pears, red or green, cored and diced but not peeled
1 sm. bag chopped walnuts
1 sm. jar pickle relish
1 sm. jar maraschino cherries, quartered

Put poultry seasoning in water while cooking chicken. You can put some salt and pepper, also, it you want to. When chicken is done, let it cool to make it easier to handle. Completely debone it. Place in a large salad bowl and knead chicken until pulpy. Add salad dressing, eggs, and pickle relish. Mix well. Add other ingredients and mix well. Use as little or much of the fruit and nuts to get the desired result you like. Season with a little salt and pepper if desired. Serves 6-8.
