3 c. torn mixed lettuce (leaf, red leaf and romaine)
1 c. cooked fresh peas or Green Giant frozen sweet peas, thawed,
drained
1/2 c. feta cheese
1/2 c. coarsely chopped seeded tomato
1/4 c. chopped onion
1/4 c. chopped fresh basil or 2 tsp.basil leaves
DRESSING
1/3 c. cider vinegar
2 tbsp. olive oil or walnut oil
2 garlic cloves, crushed
1/4 tsp. freshly ground black pepper
In large bowl, combine all salad ingredients. In small skillet,
combine all dressing ingredients; cook over medium heat until
hot. Pour over salad; toss gently. Serve immediately. 4 (1 cup)
servings.
MICROWAVE DIRECTIONS: In large bowl, combine all salad
ingredients. In 2-cup microwave-safe measuring cup, combine all
dressing ingredients. Microwave on High for 1 to 2 minutes or
until hot. Pour over salad; toss gently.
French imported walnut oil has a delicate walnut flavor. Because
it loses its flavor quickly, purchase it in small quantities and
store it in the refrigerator.
