RICE
PUDDING
1 c. uncooked rice
1/2 c. sugar
1/2 tsp. salt
6 c. milk
1 whole blanched almond
1 tsp. vanilla extract
Ground cinnamon for garnish (optional)
Combine rice, sugar, salt and milk in top of double boiler.
Cover and cook over simmering water, 1 3/4 to 2 hours or until
thickened, stirring frequently. Stir in almond and vanilla
extract. Serve with cinnamon, if desired.*
