1 (15 oz.) can Great Northern beans, rinsed and drained
1 (15 oz.) can black beans, rinsed and drained
1 1/4 c. peeled, seeded and chopped tomato
3/4 c. diced red pepper
3/4 c. diced yellow pepper
3/4 c. thinly sliced green onions
1/2 c. salsa
1/4 c. red wine vinegar
2 tbsp. chopped fresh cilantro
1/4 tsp. salt
1/8 tsp. ground pepper
8 to 10 c. finely shredded romaine lettuce
Combine white beans, black beans and chopped tomato in large
bowl, mixing gently. Add peppers and green onions, stir gently
to combine. Set bean mixture aside. Combine salsa, vinegar,
cilantro, salt and pepper in a small bowl; stir with a whisk
until well blended. Pour over bean mixture and toss gently. Line
a large serving bowl with shredded lettuce; top with bean
mixture. Chill.
