Cranberry Relish  
1 (9 oz.) can crushed pineapple
1 (3 oz.) pkg. cherry Jell-O
1/2 c. sugar
1 c. hot water
1 c. WHOLE cranberry
1 c. chopped celery
1 sm. naval orange, deseeded,
unpeeled, ground (cut in small
pieces and put in blender
1/2 c. chopped walnuts

Drain pineapple, save syrup. Add enough water to pineapple juice to make 1/2 cup. Dissolve Jell-O and sugar in hot water. Add reserved syrup and lemon juice. Chill until practically set. Add pineapple and remaining ingredients. Pour into mold. Chill overnight.

Cranberry Nut Bread 
2 c. all-purpose flour, sifted
1 c. sugar
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1/4 c. butter or margarine
1 egg, beaten
1 tsp. orange peel, grated
3/4 c. orange juice
1 1/2 c. fresh cranberries, chopped
1/2 c. walnuts, chopped

Sift flour, sugar, baking powder, salt and baking soda in a large bowl. Cut in butter until mixture is crumbly. Add egg, orange peel and orange juice all at once; stir just until mixture is evenly moist. Fold in cranberries and walnuts. Spoon into a 9 x 5 x 3 inch loaf pan. Bake at 350 degrees for 1 hour and 10 minutes or until toothpick inserted in center comes out clean. Remove from pan and cool on a wire rack.  

Cranberry Glazed Sweet Potatoes 
6 med. sweet potatoes, cooked and
halved
1 can whole cranberry sauce
1/2 c. water
1/2 c. brown sugar, firmly packed
1/2 tsp. grated orange peel
1 tbsp. butter or margarine

Arrange sweet potatoes in shallow buttered baking dish. Combine cranberry sauce, water, brown sugar and orange peel in saucepan. Mix well and bring to a boil. Cook gently 5 minutes. Add butter and pour mixture over potatoes. Bake at 350 degrees for 30 minutes, basting frequently. Yield: 4 to 6 servings.
