OATMEAL RAISIN COOKIES

1 c. softened butter
1/2 c. granulated sugar
1/3 c. light brown sugar
1 (3 oz.) pkg. instant vanilla pudding
2 eggs
1-1/4 c. flour
1 tsp. baking soda
3-1/2 c. oatmeal
1 c. raisins
1 c. chopped pecans
1 tsp. vanilla

In large mixer bowl, combine butter, the sugars and vanilla pudding. Beat until smooth and creamy. Beat in eggs. Combine flour and baking soda. Add to butter mixture. Stir in oatmeal, raisins, pecans and vanilla. Batter will be stiff. Drop by tablespoonfuls onto greased cookie sheet. Bake at 375 degrees for 12 minutes or until light brown. Makes 4 dozen large cookies.
