ICE BOX COOKIES
1 cup butter
1 cup granulated sugar
1 cup light brown sugar
2 eggs
3 1/2 to 4 cups self-rising flour
Scant teaspoon baking soda
2-1/2 teaspoons cinnamon
1-1/2 teaspoons nutmeg
1 teaspoon vanilla extract
1-1/2 cups pecans, finely chopped
Cream butter and sugars. Add
eggs, one at a time, beating well. Beat in flour, which has been
sifted with baking soda, cinnamon and nutmeg until the dough is
stiff. Add vanilla extract, blending well, and stir in pecans.
Shape into 2 or 3 long rolls and refrigerate until firm. Slice
thinly and place on greased cookie sheet. Bake 10 to 15 minutes
in 350 degrees F oven, or until brown. Remove from cookie sheet
and let cool on flat surface.
