Applesauce Cake
2 c. all-purpose flour
2 tsp. soda
1/2 tsp. cinnamon
1 tsp. cloves
3 tbsp. sprinkle sweet or 3 tbsp.
sugar
1/4 tsp. salt
1/2 c. lite oleo, melted
1 egg
1 1/2 c. unsweetened applesauce
1/2 c. raisins
1 c. dates, chopped
1 c. pecans, chopped
1 tsp. vanilla
Place all dry ingredients in sifter and sift together. Add remaining ingredients and mix
well. Pour into greased and floured loaf pan. Bake at 325 degrees for 45 minutes.
Lemonade Cake
1 box Duncan Hines yellow cake mix
1 sm. box lemon Jello
3/4 c. boiling water
4 eggs
3/4 c. Crisco oil
1 sm. can frozen lemonade
1/2 c. sugar
Mix Jello and boiling water until dissolved. Let cool. In large bowl mix cake mix, eggs,
oil and Jello mixture. Mix with a spoon, not a mixer. Spray bundt pan with Baker's Joy.
Spoon in cake mixture. Bake at 325 degrees for 1 hour, without opening oven door. In a
small bowl mix frozen lemonade and sugar together. Then pour or spoon over cake as soon as
it comes out of the oven. Then allow to cool before cutting.
Apricot Upside Down Cake
3 tbsp. butter
1 1/2 c. brown sugar
1 to 1 1/2 c. drained, canned apricots
1/2 c. shortening
2 eggs, beaten
1 c. molasses
2 1/2 c. sifted cake flour
2 tsp. soda
2 tsp. ginger
1/2 tsp. salt
1 c. sour milk
In skillet: Melt butter, add 1 cup of the brown sugar and stir until melted. Arrange
apricots cut side up. Cream shortening. Add 1/2 cup brown sugar and cream until fluffy.
Add eggs, molasses and beat. Sift flour, salt, soda, ginger; add alternately with sour
milk. Pour over apricots. Bake 325 to 350 degrees, 35 to 50 minutes. Serve with whipped
cream.
Buttermilk Chocolate Cake
2 c. flour
2 c. sugar
1 stick butter
1/2 c. Crisco (or 1 stick butter)
4 tbsp. cocoa
1 c. water
2 eggs
1/2 c. buttermilk
1 tsp. vanilla
1 tsp. soda
FROSTING
1 cube butter
3 tbsp. cocoa
1/3 c. buttermilk
1 box powdered sugar
1 tsp. vanilla
Sift flour and sugar together. Heat to a boil: 2 sticks butter, 4 tablespoon cocoa and
water. Pour over sugar and flour. Blend eggs, buttermilk, vanilla and soda. Add this
mixture to other and mix together well. Pour into greased 9 x 13 inch pan. Bake at 400
degrees for 20 minutes. Five minutes before cake is done: Melt 1 cube butter, 1/3 cup
buttermilk, 3 tablespoons cocoa, 1 box powdered sugar (mix xxx sugar in gradually), 1
teaspoon vanilla. Bring to boil and pour over hot cake and spread.
