Abby's Favorite Recipes

Mixed Vegetable and Cheese 
1 (10 oz.) mixed vegetables (frozen)
1/2 c. chopped celery
1/2 c. onions

Cook as directed on package. Do not add salt. Drain well. Add: 2 c. Hellmann's mayonnaise
Add:  
1 c. shredded American cheese
Top with Ritz crackers, 1 package. Microwave 5 minutes.

Zucchini Casserole 
3 lbs. zucchini, cut in chunks (peeled
if large are used)
2 med. onions, chopped
1/2 stick margarine
1 can cream of mushroom soup
1 c. sour cream
1 box Stove Top stuffing chicken
flavor prepared as directed

Steam zucchini for about 5 minutes or cook in microwave until partially cooked. Drain. Meanwhile, saute onions in margarine, remove from heat. Add cream of chicken soup, and sour cream. In greased casserole, layer 1/2 of zucchini, 1/2 of onion, and soup mixture and 1/2 of stuffing. Repeat layers ending with stuffing. Bake for 1 hour at 350 degrees.

Mexican Cheese Casserole 
4 chicken breasts, cooked and cut into
pieces or 2-3 cans boned chicken
1 can cream of mushroom soup
1 can cream of chicken soup
1 lg. can Pet milk
1 can chopped green chilies
2 pkgs. Doritos
Grated cheddar cheese

Crush 1 package Doritos and line casserole dish. Combine rest of ingredients and add to Doritos. Sprinkle grated cheese on top and bake at 350 degrees for 30 minutes. Use second bag of Doritos to eat casserole with.
